Ingredients:
1 c. flour
1 c. sugar
1/4 t. salt
2 c. cranberries, fresh or frozen
1/2 c. walnuts, chopped
1/2 c. butter or margarine, melted
2 eggs, beaten
1/2 t. almond extract
Directions:
In a bowl, combine the flour, sugar, salt. Add cranberries and nuts; toss to coat. Stir in the butter, eggs and extract (mixture will be very thick if using frozen berries). Spread into a greased 9-in. pie plate. Bake at 350 for 40 minutes or until a wooden pick inserted near the center comes out clean. Serve warm with ice cream.

Spinach Apple Salad
Ingredients:
10 oz Baby spinach
1/2 cup Cranberries, dried
- 1/2 Red onion, small
- 1 cup Pecans, toasted
- 4 oz Feta cheese
- 3 Small gala apples, thinly sliced
Dressing:
-
2 tsp Dijon mustard
- 1/4 tsp Black pepper, freshly ground
- 1/4 tsp Salt
- 1/4 cup Apple cider vinegar
- 1/2 cup Olive oil
Directions:
In a large bowl toss together spinach, apples, pecans, feta, cranberries and red onion. Drizzle desired amount of dressing over salad and toss to coat.

Cranberry Salad
Ingredients
We usually half this recipe.
- 1 package cranberries
- 4 tart apples
- 2 oranges
- 6 oz. Cherry Jello
- sugar to taste ( 3/4 to 1 cup)
- 1 cup walnuts
- Prepare jello as directed on package.
- Chill until thick but not jelled.
- Coarsely chop cranberries by adding a few at a time in blender.
- coarsely grate apples and oranges.
- add sugar to cranberries. mix with apples, oranges, walnuts, and thickened jello.
We usually half this recipe.
