Shrimp Etouffee

Ingredients:

4 tablespoons flour
4 tablespoons butter
1 pound shrimp
2 cups chicken broth
1 cup onion, diced
1/2 cup celery, diced
1/2 cup bell pepper, diced
4 cloves garlic, chopped
1 teaspoon thyme, chopped
1 cup tomato, diced
1 tablespoon creole seasoning
1 Tbls. Worcestershire sauce
hot sauce to taste
salt and pepper to taste
2 tablespoons butter
2 Tbls. lemon juice
1/4 cup green onions, sliced

    Directions:

    1. Melt the butter in a large sauce pan over medium heat, cook until it starts to brown sprinkle in the flour while mixing and simmer, stirring frequently, until it turns a dark brown, about 10-20 minutes.
    2. Add the onion, celery and peppers to the roux and cook until tender, about 8-10 minutes.
    3. Add the garlic and thyme and cook for a minute.
    4. Whisk in the broth, add the tomatoes, creole seasoning and Worcestershire sauce and simmer for 20 minutes.
    5. Add the shrimp and cook until cooked, about 5 minutes.
    6. Season with hot sauce, salt and pepper to taste.
    7. Mix in the lemon juice and green onion and enjoy over cooked rice.

    ***We had this over a biscuit and a poached egg in New Orleans!

    Leger's Sausage and Potatoes

    Ingredients:
    10 lbs. red potatoes
    2 lbs. smoked ring sausage
    1 red onion, chopped large
    1 yellow onion, chopped large

    Directions:
    Cut potatoes into chunks and fry in oil in electric frying pan. Cut sausage in bite size pieces and add with onion after potatoes are half cooked. Season with Tony Cashere's  Cajun seasoning.

    Grammary's Zucchini Casserole

    Ingredients:
    6 C. sliced Zucchini/yellow squash mixed
    1 med onion, chopped or sliced
    1 carrot, shredded
    1 can Cream of chicken or celery soup
    1 C. sour cream
    1 cube margarine
    8 oz. Pepperidge Farms stuffing mix


    Directions:
    Add small amount of water to vegetables and cook until tender-crisp...don't overcook. DRAIN, then add soup and sourcream.  Melt margarine and mix with stuffing crumbs.  Spread half of stuffing in large casserole dish. Pour in zucchini mixture then top with remaining crumbs.  Bake 350 until bubbly.

    Taco Casserole


    Ingredients
    • 1 lb ground beef
    • ½ onion
    • ½ shredded zucchini – optional
    • 1 cup corn
    •  1 can black beans
    • 1 can rotel
    • 1/2 package taco seasoning
    • Salt
    • 2 cups cooked rice
    • Shredded cheese
    • 9X13 pan
    Directions

    1. Brown hamburger. Add onion and zucchini
    2. Stir in taco seasoning
    3. Add corn, tomato, beans
    4. Spray pan spoon rice in the bottom
    5. Spoon meat mixture over rice
    6. Top with cheese
    7. Bake covered at 350 degrees for 25 minutes
    8. If frozen cover with foil. Let thaw overnight in the fridge. Bake at 350 degrees for 45 minutes. Then remove foil and cook until top is brown

    Wonder Soup

    Ingredients:
    •   1/2 head of cabbage, chopped ( I use a bag of mixed cabbage)
    • 1 cup celery, diced
    • 1 cup white or yellow onion diced
    • 1 cup carrots diced
    • 1 green bell pepper, diced
    • 2-3 cloves garlic, minced
    • 4 cups chicken broth
    • 14 oz can basil, oregano, garlic diced tomatoes
    • 1 teaspoon oregano
    • 1 teaspoon basil
    • 1/2 teaspoon red pepper flakes
    • few shakes of black pepper
    • 1/2 teaspoon salt (optional)
    Directions:
    1. Heat 2 tablespoons of olive oil in a large pot over medium hear
    2. Add celery, onions, carrots, and bell peppers
    3. Saute until slightly tender
    4. Stir in garlic
    5. Pour in chicken broth
    6. Stir in tomatoes and cabbage
    7. Bring to a boil and then reduce heat
    8. Cook until cabbage is tender
    9. Stir in oregano, basil, red pepper flakes, black pepper and salt (if using)
    10. Taste broth and adjust seasoning if needed
    11. Serve and Enjoy!

    Green Chili Salsa

    Ingredients:
    2 Tomatillos, husked and quartered
    1/2 c. chopped green chili
    1/2 onion, chopped
    2 Tbls. garlic
    2 Tbls. cilantro, chopped
    1/2 t. salt
    1 t. cummin
    1/2 t. oregano
    1 cup water

    Directions:
    Put all ingredients into a frying pan and boil for 10-15 minutes.  Then put into a food processor and chop until desired consistency.  Serve with taco salad or chips.

    Mexican Corn Salad - Frazee's

    Ingredients:
    2-15oz  cans whole kernel yellow corn, drained
    2 cans white shoepeg corn, drained
    1 medium onion - chopped
    1/2 green pepper - chopped
    1/2 red pepper - chopped
    1 c. Miracle Whip
    ---
    3 cups shredded sharp chedder cheese
    1 bag Fritos Chili Cheese chips or Honey BBQ twists - crushed

    Directions:
    Mix and chill the first ingredients.  Just before serving, stir in the last two ingredients.  Makes quite a bit so consider halving it.

    Potatoes and Kielbasa Skillet

    Ingredients:

    6 medium yellow or red potatoes, chunked
    1 lg. onion, chopped in large pieces
    1 ring of Kielbasa or smoked sausage, sliced
    2 T. olive oil
    1-2 T. Tony Chachere's flavoring

    Directions:

    In an electric skillet on 400 degrees heat oil then add potatoes.  Cover and fry for about 5-7 minutes stirring once. Dump onion on top and cover for about 2-3 more minutes.  Stir and cook covered for another 2-3 minutes.  Season with Tony Chachere's and add sausage.  Cook until done.

    Schmelzle's Hominy

    Ingredients:

    3-4 15 oz. Hominy
    1 can cream of celery soup
    1 can chopped green chiles
    1 sm. onion, chopped
    2-3 c. cheddar cheese, shredded
    1 tsp. Lawry's seasoning salt
    pinch of pepper

    Directions:

    Reserve 1 c. cheese.  Mix all ingredients together and bake at 350 degrees until bubbly (40 min?).  Take cover off and sprinkle reserved cheese on top.  Bake 10-15 more minutes.

    Meatloaf

    Ingredients:

    1 1/2 lb ground beef
    1 egg, beaten
    1 small onion, chopped
    1 TBS horseradish
    1 TBS catsup
    1 tsp sugar
    1 tsp salt
    1/8 tsp pepper
    1/2 c. crushed bread crumbs
    1 c. scalded milk
    1 TBS green pepper, chopped
    1 tsp Worcester

    Directions:

    Add egg to meat, mix well; then add all other ingredients.  Form into a loaf.  Bake at 350 degrees for 1 hour.  When finished let set just a couple minutes then remove from oil.

    ***This is the best meatloaf recipe I've ever had...as meatloaf goes.  It is Trish Neeley's.

    Cabbage Patch Soup

    Ingredients:

    1 1/2 lbs ground beef
    4 celery ribs, chopped
    1 medium onion, chopped
    7 c. chopped cabbage
    2 cans kidney beans, rinsed
    1 quart chopped tomatoes
    3 c. beef broth
    1 15oz. can tomatoe sauce
    4 large carrots, chopped
    1/2 tsp. sugar
    salt/pepper to taste

    Directions:

    In a large sauce pan, cook the beef, celery and onion over medium heat until meat is no longer pink; drain.  Add the remaining ingredients; bring to a boil.  Reduce heat; cover and simmer for 1 hour or until cabbage and carrots are tender.  Yield:  3 1/2 quarts

    Bruschetta

    Ingredients:

    2 -3 c. Meaty tomatoes, chopped small
    1/2 c. Onion, chopped fine
    2 T. Garlic
    2 t. Balsamic vinegar
    2 T. Olive Oil
    12-15 Basil leaves, chopped
    1 t. Sea salt

    Combine all ingredients.  Let rest a couple hours.  Serve over toasted baguette bread.

    Stuffing

     Ingredients
    • 1 loaf white bread
    • 1 cup celery, chopped
    • 2 eggs
    • turkey or chicken broth
    • 1 large package cornbread
    • 1 large onion, chopped 
    • sage to taste ( try 1 T.)
    • 1/4 c. butter, melted  
    Directions
    1. Prepare cornbread as directed
    2. Toast bread slices and let dry overnight. 
    3. In a large bowl, break bread into small pieces and crumble cornbread. Add celery, onions, sage, salt and pepper to taste. Add leftover egg whites from pies. 
    4. Melt butter in 2 cups (or one can) of broth and use to moisten stuffing to desired texture. 
    5. Stuff cavity of turkey and pack up around legs or place in 9 x 13 pan and bake at 350 degrees.
    *** Make it more dry than moist for stuffing turkey as turkey juices will moisten further.

      Corn Salsa

      Ingredients
      • 1 small onion, chopped
      • three large roma tomatoes, diced
      • 1 can of white shoepeg corn, drained
      • 1 can of regular corn, drained
      • 1 can of black beans, drained and rinsed
      • 1-2 jalapinos
      • avocado (if available)
      • fresh cilantro to taste
      • 3/4 t. salt
      • garlic to taste
      • T. lime juice
      Directions
      1. mix ingredients together.

      Mom's Salad Dressing

      Ingredients
      • 2 T. cider vinegar
      • 1/4 c. sugar
      • 2 T. honey
      • 1 1/2 t. lemon juice
      • 1/2 t. paprika
      • 1/2 t. ground mustard
      • 1/2 t. grated onion
      • 1/4 t. celery seed
      • dash salt
      • 1/3 c. canola oil
      Directions
      1. mix all ingredients but canola oil in a large glass measuring cup
      2. microwave for 1-2 minutes until sugar is dissolved
      3. whisk in oil
      This salad works best with a salad topped with chicken and mandarin oranges or strawberries.........
