Creamy Tomato-Basil Soup


Creamy Tomato Basil Soup - This is a must have cold weather recipe.

Ingredients:

  • 1 Tbsp Olive Oil
  • 2 Garlic cloves, pressed
  • 1 large Shallot, diced
  • 2 (28 oz) cans Crushed Tomatoes
  • 1½ cup Chicken Stock (or vegetable stock)
  • 1 Tbsp Sugar
  • ½ Tsp Dried Oregano
  • 2 Tsp Kosher Salt
  • Several grinds of Pepper (to taste)
  • 1 Cup Half and Half
  • 12 - 15 large Fresh Basil leaves, chopped

Directions:

  1. In a dutch oven or heavy bottomed pot, heat olive oil over medium-high heat. Add shallot and saute until translucent.
  2. Add garlic and saute another 30 seconds.
  3. Add crushed tomatoes (juice and all), chicken stock, oregano, sugar, salt, and pepper.
  4. Bring to a low simmer. Cook uncovered, for 15 minutes or until it has thickened.
  5. Add the half and half, basil and season to taste with salt and pepper.
  6. Store in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months.

Carrot-Pecan Ice Cream Cake

Ingredients:

1 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1 1/2 c. grated carrot
1/2 c. chopped pecans
1/2 c. shredded coconut
1/4 c. raisins
1 c. sugar
1/2 c. vegetable oil
2 large eggs
3 pints of butter pecan ice cream
Toasted nuts and coconut

Directions:

Preheat oven to 325 degrees.  Butter and flour or line with parchment three round cake pans. Wisk together flour, powder, soda, cir mixture, cinnamon, and salt.  Beat sugar and oil until smooth then add eggs one at a time.  Reduce speed and add flour mixture, until just combined.  Gently fold in carrot, pecans, coconut, and raisins.  Divide batter among the three pans and bake 35 to 40 minutes. Unmold and cool to room temperature or freeze.  Layer cake and ice cream for three layers.  Then sprinkle toasted nuts and coconut on top while the ice cream is soft. Freeze.

Chili Cheese Breakfast Casserole

Ingredients: 
8 eggs, beaten
1/2 c. flour
1 tsp. baking powder
1 tsp. salt
12 oz. cottage cheese
3 c. Monterrey Jack cheese
2 4oz. cans of chopped green chili
1 large tomato, cubed
1 small onion, diced small

Mix flour, powder, and salt into the eggs.  Add remaining ingredients and pour into a greased 9x13 inch pan.  Cook at 350 for about 40 minutes or until done.

Chocolate Chip Cookies

Ingredients:

2 cups butter
2 cups sugar
2 cups brown sugar
4 eggs
2 Tbls. vanilla
4 cups flour
5 cups oatmeal (ground into flour)
4 tsp baking soda
4 tsp baking powder
1 tsp salt
2 12oz bags chocolate chips
8 oz Hershey bar, shaved
3 c. nuts

Directions:
  1. Cream together butter, sugar and brown sugar. Add eggs and vanilla and mix well. Mix together flour, oat flour, salt, baking powder and baking soda. Stir in chocolate chips, grated Hershey bar and nuts (if using). Drop by 1 1/2" balls onto cookie sheet with parchment. Bake at 375° for 6-10 minutes.

Beet Salad

Salad Ingredients:

2 Lg. Beets, cooked and diced
1 can mandarin oranges
3 Tbsp. purple onion chopped
Feta Cheese to taste

Dressing Ingredients:

2 Tbsp. olive oil
2 Tbsp. Balsamic vinegar
2 Tbsp. lime juice
2 Tbsp. honey

Mix dressing ingredients in a bowl.  Add salad ingredients, stir and chill.

Green Chili Salsa

Ingredients:
2 Tomatillos, husked and quartered
1/2 c. chopped green chili
1/2 onion, chopped
2 Tbls. garlic
2 Tbls. cilantro, chopped
1/2 t. salt
1 t. cummin
1/2 t. oregano
1 cup water

Directions:
Put all ingredients into a frying pan and boil for 10-15 minutes.  Then put into a food processor and chop until desired consistency.  Serve with taco salad or chips.

Mexican Corn Salad - Frazee's

Ingredients:
2-15oz  cans whole kernel yellow corn, drained
2 cans white shoepeg corn, drained
1 medium onion - chopped
1/2 green pepper - chopped
1/2 red pepper - chopped
1 c. Miracle Whip
---
3 cups shredded sharp chedder cheese
1 bag Fritos Chili Cheese chips or Honey BBQ twists - crushed

Directions:
Mix and chill the first ingredients.  Just before serving, stir in the last two ingredients.  Makes quite a bit so consider halving it.

Spinach Apple Salad

Ingredients:
 10 oz Baby spinach
1/2 cup Cranberries, dried


  • 1/2 Red onion, small
  • 1 cup Pecans, toasted
  • 4 oz Feta cheese
  • 3 Small gala apples, thinly sliced


    Dressing:

    2 tsp Dijon mustard
2 tbsp Maple syrup, pure
  • 1/4 tsp Black pepper, freshly ground
  • 1/4 tsp Salt
  • 1/4 cup Apple cider vinegar
  • 1/2 cup Olive oil

Directions:


In a large bowl toss together spinach, apples, pecans, feta, cranberries and red onion.  Drizzle desired amount of dressing over salad and toss to coat.

Shrimp and Asparagus

Ingredients:

Spinach and Cheese Manicotti

Ingredients:

1 onion, chopped
2 t. minced garlic
lots of sliced/chopped mushrooms
lots of spinach
2 T. Italian Seasoning
2 c. cottage cheese
3 oz. cream cheese
8 oz. mozzarella cheese, divided
3 oz. parmesan cheese, divided
1 jar of spaghetti sauce

Directions:

In  a skillet saute' chopped onion, garlic, and sliced mushrooms in olive oil.   Add fresh chopped spinach and cook till softened.  Meanwhile mix cheeses together in a bowl with the Italian seasoning, salt, and pepper.  Combine the cheese and vegetables and stuff the cooked and cooled manicotti by spooning in a teaspoon at a time being careful not to tear the shells.  
  1. Pour half of spaghetti sauce in bottom of 9 x 13 inch baking dish.  Arrange shells over the sauce and top with remaining sauce. Cover and bake at 350 degrees for 30 minutes. Remove from oven , uncover and sprinkle remaining cheeses over top. Return to oven until cheese melts.

Strawberry Mango Salsa

Ingredients:

3/4 cup diced strawberries
3/4 cup diced mango
1 jalapeño, seeded and diced
2 tbsp diced red onion
2 tbsp chopped fresh cilantro leaves
2 tsp honey, or to taste
Juice of 1 limes

Directions:

In a large bowl, combine strawberries, mango, jalapeño, onion, cilantro, honey, and lime juice. Serve immediately.

Pesto Chicken Pasta

  • Ingredients:

  • 1 tablespoon olive oil
  • 1/4 lb chicken thighs, boneless, skinless, chopped
  • 1/4 cup sun-dried tomatoes, drained of most oil, chopped
  • 1/4 teaspoon red pepper flakes
  • 4 oz mushrooms, sliced
  • 3 garlic cloves, minced
  • 1/2 cup basil pesto
  • 1 cup milk
  • 1/4 teaspoon salt, and more
  • 8 ounces penne pasta (use gluten free for gluten free version)
  • fresh basil, chopped
Directions:  
  1. Heat olive oil in a large skillet on medium heat. Add chicken (chopped up) with sun-dried tomatoes (chopped into smaller bites) to the skillet, sprinkle with red pepper flakes. Saute for about 1 minute on medium heat.
  2. Add sliced mushrooms (add another 1 tablespoon olive oil if needed) and saute for about 2 more minutes (or a little bit more), until chicken is cooked through and mushrooms are softened.
  3. Add garlic, pesto, milk, and 1/4 teaspoon of salt. Bring to boil, immediately reduce to simmer and simmer, stirring until everything is well combined. Remove from heat. Taste, and add more salt, if needed.
  4. Cook pasta according to package instructions. Drain. Add cooked pasta to the sauce, reheat.
  5. Top with chopped fresh basil.

Chili

Ingredients:

2 cans of pinto beans
1 lb. of hamburger
1 onion, chopped
4 oz. green chili
1 qt. tomatoes
1 sm. can tomato sauce
1 t. garlic
2 t. chili powder
1 t. oregano
1/2 t. red pepper
1/2 t. black pepper

Directions:

Fry ground beef and onion together.  Add all other ingredients.  Cook till heated through.

Potatoes and Kielbasa Skillet

Ingredients:

6 medium yellow or red potatoes, chunked
1 lg. onion, chopped in large pieces
1 ring of Kielbasa or smoked sausage, sliced
2 T. olive oil
1-2 T. Tony Chachere's flavoring

Directions:

In an electric skillet on 400 degrees heat oil then add potatoes.  Cover and fry for about 5-7 minutes stirring once. Dump onion on top and cover for about 2-3 more minutes.  Stir and cook covered for another 2-3 minutes.  Season with Tony Chachere's and add sausage.  Cook until done.

***Brother Leger's Recipe

Chicken and Broccoli

Ingredients:
1 1/2 T. sesame oil
2 T fresh garlic
1/4 t dried red pepper flakes
4 c. broccoli florets
6 T. chicken broth, divided
1 T. sesame oil
1 1/4 lbs  chicken breasts, sliced thinly
5 green onions, chopped
1/4 c. hoisin sauce
3 T. oyster sauce
sesame seeds

Directions:
In large skillet heat 1 1/2 T. sesame oil over medium heat.  Add in chopped garlic and chili flakes; saute for about 1 minute.  Add in broccoli florets and 4 T. chicken broth; cover skillet and cook until the broccoli is just crisp-tender (about 2 minutes) transfer to a bowl.

Add in 1 T. sesame oil to the skillet.  Season the chicken strips with salt and pepper, then add to the hot skillet; saute until the chicken is cooked through (about 3 minutes.)  Add in the green onions, 2 T chicken broth, hoisin sauce and oyster sauce.

Add in the broccoli florets back to the skillet; toss to combine until heated through (about 1-2 minutes).  Transfer to a platter or large bowl and sprinkle with sesame seeds.  Serve with cooked rice.

Tapioca Pudding Salad

Ingredients:

1 3oz. strawberry jello
1 3oz. vanilla pudding (cooked kind)
1 3oz tapioca pudding
strawberries/bananas

Directions:

Boil 3 c. water.  Add jello and both puddings.  Return to heat.  Cook 2-5 minutes until mixture thickens.  Cool overnight.  Add Cool Whip and fruit.  ***Marlene Rempe's salad

Frozen Strawberry Salad

Ingredients:

1 8 oz. cream cheese
3/4 c. sugar
3 lg bananas, sliced
2 c. crushed pineapple
16 oz. frozen strawberries, thawed
1 tub Cool Whip
1/2 . chopped nuts

Directions:

Cream together cream cheese and sugar.  Add bnanas, nuts, pineapple and strawberries.  Fold in Cool Whip into 9x13 inch pan and freeze.  Keeps 4 to 6 weeks.  Serve just a little bit thawed.

Peanut Butter Pie

Ingredients:

3/4 c. powdered sugar
1/2 c. chunky peanut butter
1 sm. pkg. instant pudding (chocolate, vanilla, or butterscotch)
1 tub Cool Whip
1 baked 9 inch pie shell

Directions:

Mix and crumble the powdered sugar and peanut butter.  Place half of mixture on bottom of pie shell. Save the rest for top of pie.  Mix pudding as directed and pour over crumbs.  Chill.  Top with Cool Whip and sprinkle the rest of the crumbs on top.

Jalapeno Popper Dip

Ingredients:

2 pkgs cream cheese
1/3 c. mayo
4 oz. shredded Parmesan cheese
2 cans chopped green chilis
Some chopped jalapenos

Heat together in a crockpot.  Serve with tortilla chips or Fritos.  You could add bacon crumbles.

Freezer Corn

Ingredients:

4 quarts corn
1 quart water
1/2 c. sugar
4 tsp. salt

Directions:

Boil ingredients for 10 minutes.  Bag into Ziplock quart bags and place in freezer.

Granola

Ingredients:

1/2 tsp. cinnamon
1/2 tsp. salt
4 T. butter
1/3. honey
1/2 tsp. vanilla
3 c. oats
1/2 c. almonds
1/2. c. coconut
1/2. c.. walnuts
1/2 c. raisins
1/2 c. tropical trio

Directions:

Melt the first five ingredients together.  Mix the oats, almonds, coconut, and walnuts together and pour the melted ingredients over it.  Bake at 325 degrees for 10 minutes.  Add in the dried fruit and bake 10 - 15 more minutes stirring twice.




Chocolate Icing

Ingredients:

1 cube butter
3 Tbls. c ocoa
1/2 c. milk
3 1/2 c. powdered sugar
1 tsp. vanilla
pinch of salt.

Directions:

Melt the first three ingredients together in the microwave. Stir in the last three ingredients.

Schmelzle's Hominy

Ingredients:

3-4 15 oz. Hominy
1 can cream of celery soup
1 can chopped green chiles
1 sm. onion, chopped
2-3 c. cheddar cheese, shredded
1 tsp. Lawry's seasoning salt
pinch of pepper

Directions:

Reserve 1 c. cheese.  Mix all ingredients together and bake at 350 degrees until bubbly (40 min?).  Take cover off and sprinkle reserved cheese on top.  Bake 10-15 more minutes.

Gina's Corn Dip

Ingredients:

2 cans whole kernel corn
1 can of Rotel
1 carton Robert's Sassy Salsa
OR 16 oz. Sour Cream with salsa added
1 c. Miracle Whip or Mayo
8 oz. Cheddar Cheese

Mix all ingredients together and chill.  Serve with Fritos Scoops.

Scotcheroos

Ingredients:

1 c. Karo syrup
1 c. sugar
1 1/2 c. peanut butter
6 c. rice krispies
1/2  bag milk chocolate chips
3 squares chocolate almond bark

Directions:

Heat first three ingredients for one minute; stir.  Heat an additional 1 1/2 minutes.  Stir in rice krispies; spread in a pan.  Melt chocolate and spread on top.

Meatloaf

Ingredients:

1 1/2 lb ground beef
1 egg, beaten
1 small onion, chopped
1 TBS horseradish
1 TBS catsup
1 tsp sugar
1 tsp salt
1/8 tsp pepper
1/2 c. crushed bread crumbs
1 c. scalded milk
1 TBS green pepper, chopped
1 tsp Worcester

Directions:

Add egg to meat, mix well; then add all other ingredients.  Form into a loaf.  Bake at 350 degrees for 1 hour.  When finished let set just a couple minutes then remove from oil.

***This is the best meatloaf recipe I've ever had...as meatloaf goes.  It is Trish Neeley's.

Cheddar Chowder

Ingredients:

2 c. water
2 c. potatoes, diced
1/2 c. carrots, diced
1/2 c. celery, diced
1/4 c. onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 c. cubed ham
1 can corn
1/4 c. butter
1/4 c. flour
2 c. milk
2 c. cheddar cheese, grated

Directions:

Combine first seven ingredients in a large kettle and boil 10-12 minutes.  Meanwhile in a small saucepan, make a white sauce by melting butter, then add flour.  Stir until smooth and slowly add milk; cook until thickened.  Add grated cheese and stir until melted.  Add white sauce, corn and cubed ham to cooked vegetables.  Heat through.

White Chili

Ingredients:

4 cans Northern (Navy) beans
6 cups chicken broth
1 cube beef bouillon
1-2 onions, chopped
4 tsp ground cumin
2 tsp garlic powder
2 tsp oregano
1/2 tsp cayenne pepper
2-4 stalks of celery
2 cans white shoe peg corn
2 (4 oz.) cans mile green chilies, diced
4 cups chicken, diced and cooked
2 cups sour cream
3 cups Monterey Jack or mozzarella cheese, grated

Directions:

In a large pot, cook onion and celery in a little water until clear.  Add beans, corn, broth, bouillon, seasonings, and chilies.  Bring to boil.  Reduce heat and simmer 5 min. Add chicken, sour cream and cheese.  Simmer over low heat until heated through.

Cabbage Patch Soup

Ingredients:

1 1/2 lbs ground beef
4 celery ribs, chopped
1 medium onion, chopped
7 c. chopped cabbage
2 cans kidney beans, rinsed
1 quart chopped tomatoes
3 c. beef broth
1 15oz. can tomatoe sauce
4 large carrots, chopped
1/2 tsp. sugar
salt/pepper to taste

Directions:

In a large sauce pan, cook the beef, celery and onion over medium heat until meat is no longer pink; drain.  Add the remaining ingredients; bring to a boil.  Reduce heat; cover and simmer for 1 hour or until cabbage and carrots are tender.  Yield:  3 1/2 quarts

Chile Relleno Soup

Ingredients:

  • 5 poblano peppers
  • 2 tbsp butter
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 4 cups chicken bone broth
  • Salt and pepper to taste
  • 1 lb boneless, skinless chicken breast, cut into 1/2 inch pieces
  • 8 ounces cream cheese, cut into cubes
  • 2 cups shredded cheddar cheese, divided
  • 2 cans northern white beans
Directions:

  1. Roast poblano peppers until skin is charred and blistered. You can do this over the open flame on a gas stove, or by heating your broiler to high and placing poblanos within a few inches of the broiler (turning to get all sides charred).
  2. Place poblanos in a bowl and cover with plastic wrap. Let cool, then rub skin to remove as much as possible. Cut out seeds and then place in a food processor or blender to finely chop. Set aside.
  3. In a large saucepan over medium heat, melt butter. Add onion and cook, stirring frequently, until translucent, about 5 minutes. Add garlic, cumin, and poblanos and stir until fragrant, about 1 minute.
  4. Stir in chicken broth and season to taste with salt and pepper. Bring to a boil and then reduce heat to a simmer. Add chicken pieces and continue to cook until chicken is cooked through, about 10 minutes.
  5. Add cream cheese and two cups of the cheddar cheese and whisk until smooth.
***I used green chilles instead of poblanos.

Bran Rolls

Ingredients:
1/2 c. Bran Buds
1/2 tsp. salt
1/2 cube margarine
1/4 c sugar
2 eggs, beaten
2 tsp. yeast in 1/2 c. warm water,
2 1/2 c. flour

Directions:
Place bran, salt, margarine and sugar in bowl, pour 1/2 c. boiling water over this.  Cover and wait 15 minutes.  Add remaining ingredients; knead.  let raise once.  Form into rolls or loaves for bread.  Cook 30-45 minutes at 375 degrees.

***I layer in my bread maker in this order:  1 c. water, buds, salt,margarine, sugar,  Let sit 15 minutes.  Then add eggs, top with flour and put yeast in the top of the flour.  Press timer and start.


Chicken Soup

Ingredients:

3 lg. carrots, cut small
3 sticks of celery, cut small
1/2 onion, chopped
8 c. chicken broth
2 large chicken breasts
1 c. frozen corn
wide egg noodles
salt & garlic pepper
bay leaf
8 oz. sliced mushrooms, optional

Directions:

Boil chopped veggies in broth while frying chicken pieces.  Add chicken pieces, corn, noodles,, salt, pepper and bay leaf.  Boil till noodles are almost done and add mushrooms.  Top with chopped green onions and serve with fresh baked rolls.
