Ice Cream in a Can

Ingredients:
1 c. milk
1 c. whipping cream
1/2 c. sugar
1/2 t. vanilla

Directions:
Fill small can or Qt size freezer bag with ingredients. Put inside of a larger can or gallon freezer bag along with salt and ice.  Mix until the ice cream sets up.

Chocolate Icing

Ingredients:

1 cube butter
3 Tbls. c ocoa
1/2 c. milk
3 1/2 c. powdered sugar
1 tsp. vanilla
pinch of salt.

Directions:

Melt the first three ingredients together in the microwave. Stir in the last three ingredients.

Meatloaf

Ingredients:

1 1/2 lb ground beef
1 egg, beaten
1 small onion, chopped
1 TBS horseradish
1 TBS catsup
1 tsp sugar
1 tsp salt
1/8 tsp pepper
1/2 c. crushed bread crumbs
1 c. scalded milk
1 TBS green pepper, chopped
1 tsp Worcester

Directions:

Add egg to meat, mix well; then add all other ingredients.  Form into a loaf.  Bake at 350 degrees for 1 hour.  When finished let set just a couple minutes then remove from oil.

***This is the best meatloaf recipe I've ever had...as meatloaf goes.  It is Trish Neeley's.

Cheddar Chowder

Ingredients:

2 c. water
2 c. potatoes, diced
1/2 c. carrots, diced
1/2 c. celery, diced
1/4 c. onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 c. cubed ham
1 can corn
1/4 c. butter
1/4 c. flour
2 c. milk
2 c. cheddar cheese, grated

Directions:

Combine first seven ingredients in a large kettle and boil 10-12 minutes.  Meanwhile in a small saucepan, make a white sauce by melting butter, then add flour.  Stir until smooth and slowly add milk; cook until thickened.  Add grated cheese and stir until melted.  Add white sauce, corn and cubed ham to cooked vegetables.  Heat through.

Pumpkin Pie

Ingredients
  • 2 cups pumpkin (cooked and mashed)
    • we use cans of pumpkin
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 2 cups milk
  • 2 eggs, beaten
  • 1 teaspoon ginger
Directions
  1. mix together and heat up but don't let boil.
  2. Pour into unbaked pie shell.
  3. Bake approximately 1 hour and 15 minutes. at 350 degrees.
*** fill pie crusts to almost overflow.
