Stuffing

 Ingredients
  • 1 loaf white bread
  • 1 cup celery, chopped
  • 2 eggs
  • turkey or chicken broth
  • 1 large package cornbread
  • 1 large onion, chopped 
  • sage to taste ( try 1 T.)
  • 1/4 c. butter, melted  
Directions
  1. Prepare cornbread as directed
  2. Toast bread slices and let dry overnight. 
  3. In a large bowl, break bread into small pieces and crumble cornbread. Add celery, onions, sage, salt and pepper to taste. Add leftover egg whites from pies. 
  4. Melt butter in 2 cups (or one can) of broth and use to moisten stuffing to desired texture. 
  5. Stuff cavity of turkey and pack up around legs or place in 9 x 13 pan and bake at 350 degrees.
*** Make it more dry than moist for stuffing turkey as turkey juices will moisten further.

    Cream Pies

    Ingredients
    • 9 inch baked pie shell
    • 2/3 cup sugar
    • 1/2 teaspoon salt
    • 2 1/2 tablespoon cornstarch
    •  1 tablespoon flour
    • 3 cup milk
    • 3 egg yolks, slightly beaten
    • 1 tablespoon butter
    • 1 1/2 teaspoon vanilla
    Directions
    1. In a large glass bowl, mix sugar, salt, cornstarch and flour; gradually stir in milk.
    2. Cook two minutes at a time stirring until mixture thickens and boils. 
    3. Add some of the hot custard into the egg yolks and then stir them back into the large bowl.
    4. Place back into the microwave for two more two-minute intervals, stir constantly.
    5. Remove from heat and blend in butter and vanilla. 
    6. Pour into pie shell and chill.
    banana cream pie - line pie shell with slices of banana and top with whipped cream.
    coconut cream pie - add shredded coconut to mixture before pouring into shell. Top with whipped cream and toasted coconut.

    *** Keep close eye on coconut. Often burnt.....

    Pie Crust

    Ingredients
    • 4 cups flour
    • 2 teaspoon salt
    • 1-3/4 cups Crisco
    • 1 tablespoon vinegar
    • 1 teaspoon baking powder
    • 1 tablespoon sugar
    • 1 egg slightly beaten
    • 1/2 cup water
    Directions
    1. Cut Crisco into flour, powder, salt and sugar with fork.
    2. Set aside.
    3. Mix egg, vinegar and water together and add to flour mixture.
    4. Mix together with fork, then roll.
    *** Pinch the side so it doesn't shrink.

    Pumpkin Pie

    Ingredients
    • 2 cups pumpkin (cooked and mashed)
      • we use cans of pumpkin
    • 1 cup sugar
    • 1 teaspoon cinnamon
    • 1/4 teaspoon cloves
    • 2 cups milk
    • 2 eggs, beaten
    • 1 teaspoon ginger
    Directions
    1. mix together and heat up but don't let boil.
    2. Pour into unbaked pie shell.
    3. Bake approximately 1 hour and 15 minutes. at 350 degrees.
    *** fill pie crusts to almost overflow.

    Cranberry Salad

    Ingredients
    • 1 package cranberries
    • 4 tart apples
    • 2 oranges
    • 6 oz. Cherry Jello
    • sugar to taste ( 3/4 to 1 cup)
    • 1 cup walnuts
    Directions
    1. Prepare jello as directed on package.
    2. Chill until thick but not jelled.
    3. Coarsely chop cranberries by adding a few at a time in blender.
    4. coarsely grate apples and oranges.
    5. add sugar to cranberries. mix with apples, oranges, walnuts, and thickened jello.

    We usually half this recipe.

    Banana Bread

    Ingredients
    • 3 to 4 ripe bananas
    • 1 & 3/4 cup sugar
    • 3/4 cup butter
    • 2 eggs
    • 1 teaspoon vanilla
    • 3 cup flour
    • 1 & 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 & 1/3 cup water
    • 1/2 cup walnuts
    • 1/4 cup miracle whip

    Directions 
    1. preheat oven to 350 degrees.
    2. Mix bananas, butter, sugar, eggs, Miracle Whip, and vanilla.
    3. Add: flour, soda, salt; mix.
    4. Add: water gradually as you mix, then nuts.
    5. If batter seems too thin you may want to add some more flour.
    6. Bake in greased and floured Bundt cake pan until golden brown and pulling away from edges of pan.
    ** Makes good muffins too.

    Fresh Fruit Crisp

    Ingredients
    • 1 cup quick-cooking rolled oats
    • 1 cup packed brown sugar
    • 1/2 cup all-purpose flour
    • 1 teaspoon ground cinnamon
    • 1/2 cup butter or margarine
    • fill 2/3 full 9x13 pan of apples, peaches, or pears, etc.
    • 2 tablespoons granulated sugar 
    **** Vanilla Ice Cream goes best with this

    Directions
    1. Preheat oven to 350
    2. Combine oats, brown sugar, flour, cinnamon, and dash salt.
    3. Cut in butter till mixture resembles coarse crumbs; set aside.
    4. Peel, core, and slice fruit to make 5 to 6 cups.
    5. Place fruit in a baking dish
    6. sprinkle with granulated sugar
    7. sprinkle crumb mixture over all
    8. bake in oven for 40-45 min.
    9. serve with ice cream
    ***  6 servings
