Shrimp Fettuccine

SHRIMP FETTUCCINE 
2 lbs. shrimp, raw, peeled and cleaned
1 lg. onion, diced fine
3 stalks celery, chopped fine
2 cloves garlic, chopped fine
8 oz. pkg. Velveeta cheese
12 oz. fettuccine
1 1/2 sticks butter
1/4 c. flour
1 pt. half & half
3 tbsp. parsley
Salt, red and black pepper to taste
Bread crumbs

Saute onions, garlic and celery in butter until soft. Add flour and cook 5 minutes. Add half & half and mix well. Dice cheese, add and let melt. Cook on low for 5 minutes. Add shrimp and simmer slowly 20-25 minutes. Add parsley and season with salt, red and black pepper to taste. Cook fettuccine and add to shrimp mixture. Transfer to 9x13 inch casserole, top with bread crumbs and bake 20-30 minutes at 350 degrees. 6-8 servings.

Lots of changes! Like less butter, and added peas. Maybe some Tony's Cashiers.

Caramel Apple Cake

           Mix and boil together 2 cups water and 2 cups brown sugar and 4 tbsp butter. set aside. Prepare batter:

Ingredients

  • 1/4 cup Butter
  • 1 cup chopped, peeled apples
  • 1 tsp.nutmeg & cinnamon
  • 1 cup milk
  • 1 cup raisins
  • 1 cup sugar
  • 2 cups flour
  • 2-1/2 tsp Baking Powder
  • 1-1/2 tsp Baking Soda
  • 1 tsp Vanilla
  • 1/2 cup chopped nuts
  • 1/2 tsp salt
  • whipped cream or ice cream
Directions
  1. Cream butter, add sugar and cream together. Add chopped apples, mix. Sift  dry ingredients together and alternating with milk, add to creamed mixture. Stir in remaining ingredients (except whipped cream). Spread batter into a greased 13x9x2" pan. Pour hot brown sugar mixture over batter. Bake at 375 degrees for 45 minutes. Serve hot or cold with whipped cream or ice cream if desired. Makes 20-24 servings.

Chicken Noodle Soup

Ingredients
  •  1/2 Onions
  •  4 stalks of Celery
  •  1 cup of diced Carrots
  •  10 cups of water
  •  6 Chicken bullion cubes
  •  8 oz. Egg Noodles
  •  1 (13 oz) can of Chicken
  •  A few Bay Leaves
  •  1 can of Corn
  • Garlic Powder, Pepper, Salt, Parsley to taste
Directions

  1. Cut onions, celery, and carrots, and pour into a large pot. Add seasonings (pepper, salt, garlic, parsley, bullion cubes, and bay leaves). 
  2. Add 4 cups of water and bring to a boil. Allow to boil until tender.
  3. Add shredded chicken and remaining water. bring to boil.
  4. Add noodles and corn.
  5. Cook until noodles are tender.
  6. Enjoy!

Pineapple Freezy

Ingredients
  • smash 5-15 bananas
  • 46oz (1 qt 14oz) pineapple juice
  • 2 lemonade frozen concentrate                                                             
  • 2 orange frozen concentrate                            
  • 4 cups sugar
  • 7 cups water
  • 1 pack lemon-lime kool-aid mix
     
Directions
  1. Mix in a HUGE bowl and freeze!!
  2.  After frozen, scoop some in cup
  3. Add water and mix until slush!

Broccoli Salad

Ingredients
  • 1 bunch of broccoli flowerettes ( cut bite size)
  • 1 stalk celery - cut up
  • 1/2 red onion, cut
  • 1 red pepper
  • 1 green pepper
  • 1 cup bean sprouts
  • left over chicken pieces
  • sliced almonds
  •  1 cup sugar
  • 1 cup oil
  • 1/2 cup vinegar
  • 2 Tblsp. soy sauce
Directions

Mix veggies together in large bowl.  Put chicken and almonds in.  Mix the last four ingredients for the dressing and pour over veggies.  The vinegar will "cook" the broccoli and it will keep for a week in the fridge.  Sometimes I leave out the chicken and/or bean sprouts.

Teriyaki Sauce

Ingredients
  • 10 oz. bottle of soy sauce
  • 1/2 cup brown sugar (or to taste)
  • 1/3 cup of honey
  • 1 tsp. powdered ginger
  • 1-2 cloves of garlic crushed (or to taste)
Directions
  1. mix together and whala!!
  2. Use on grilled chicken breast...Yum!

Cinnamon Syrup

Ingredients
  • 1c. sugar
  • 1/2c brown sugar
  • 2/3c water
  • 3/4t cinnamon
  • 1/2c cream

Directions
  1. bring to a boil
  2. enjoy!
