Turkey Roll Ups

Ingredients:
2 c. chopped turkey
8 oz. cream cheese
1/4 c. margarine
1/4 tsp. salt
dash pepper
1 sm can mushrooms, chopped

Directions:
Roll mixture into 16 balls. Open two packages of crescent rolls and divide into sixteen pieces.  Wrap one dough piece around each ball.  Pinch dough closed.  Dip in melted butter then into seasoned bread crumbs.  Bake 20-30 minutes at 350 degrees.  Pour gravy or cream of chicken soup on rolls before serving.    ***Primary leadership meeting.

Cheeseburger Soup

Ingredients:

1 1/2 cups water
2 cups cubed potatoes
2 small carrots grated
1 small onion chopped
1/4 cup chopped bell pepper
1 jalapeƱo seeded and chopped
1 minced clove garlic
1 tablespoon beef bouillon granules
1/2 tsp. salt
1 lb. hamburger. Cook/drain
2 1/2 cups milk divided
3 tablespoons flour
8 oz. velveeta, cubed
1/4-1 tsp. cayenne pepper
1/2 lb. bacon, cooked/crumbled

Directions:

In large saucepan combine first 9 ingredients. Bring to boil. Reduce heat, cover, simmer 15-20 minutes until potatoes are tender. Stir in beef and 2 cups milk. Heat through. Combine remaining milk and flour until smooth. Gradually stir into soup. Bring to boil and stir for 2 minutes or until thick and bubbly. Reduce heat, stir in cheese until melted. Add cayenne pepper. Stir in bacon just before serving.

Macaroni and Cheese

Ingredients:

3 Tbls. Butter
1/4 c. flour
1 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper
2 1/2 c. milk
2 c. Cheddar cheese, grated
1/2 lb. Velveeta cheese
1 c. Mozzarella cheese, grated
1 16 oz. box elbow macaroni

Directions:
In large saucepan, melt butter over low heat.  Stir in flour, salt, mustard and pepper until smooth; take off heat.  Little by little, stir in milk until smooth.  Stir constantly for 10 minutes on heat until thick; take off heat.  Stir in all cheeses until melted.  Put cooked macaroni in a greased casserole dish, pour cheese mixture over and mix well.  Sprinkle with paprika.  Bake 375 degrees for 20 minutes.

***I also add dried onions and Cayenne pepper.

Lasagna Soup

Ingredients:

Pumpkin Cookies


Ingredients:

  • 1 Box Spice Cake 
  • 1 can pumpkin 
  • nuts
  • dried cranberries
  • chocolate  chips


Directions:

  1. Stir cake mix into pumpkin.
  2. Add nuts, cranberries, and chips
  3. Drop onto cookie sheet.
  4. Bake at 350 for 8-10 minutes.

Sweet and Sour Chicken

Ingredients
  • 1/4 cup chicken broth
  • 4 Tbl ketchup
  • 2 Tbl soy sauce
  • 1 teaspoon garlic salt
  • 1/2 cup vinegar
  • 3/4 sugar
  • 1 Tbl corn starch
Directions

1.  Mix ingredients over medium heat, heat helps them desolve together
2.  Pour over cut up chicken in a baking pan.
3.  Bake at 350 until chicken is done. About 1 1/2 hours.  I usually cover for half the time and turn the pieces after 45 minutes.

Shrimp Fettuccine

SHRIMP FETTUCCINE 
2 lbs. shrimp, raw, peeled and cleaned
1 lg. onion, diced fine
3 stalks celery, chopped fine
2 cloves garlic, chopped fine
8 oz. pkg. Velveeta cheese
12 oz. fettuccine
1 1/2 sticks butter
1/4 c. flour
1 pt. half & half
3 tbsp. parsley
Salt, red and black pepper to taste
Bread crumbs

Saute onions, garlic and celery in butter until soft. Add flour and cook 5 minutes. Add half & half and mix well. Dice cheese, add and let melt. Cook on low for 5 minutes. Add shrimp and simmer slowly 20-25 minutes. Add parsley and season with salt, red and black pepper to taste. Cook fettuccine and add to shrimp mixture. Transfer to 9x13 inch casserole, top with bread crumbs and bake 20-30 minutes at 350 degrees. 6-8 servings.

Lots of changes! Like less butter, and added peas. Maybe some Tony's Cashiers.
