Pineapple Freezy

Ingredients
  • smash 5-15 bananas
  • 46oz (1 qt 14oz) pineapple juice
  • 2 lemonade frozen concentrate                                                             
  • 2 orange frozen concentrate                            
  • 4 cups sugar
  • 7 cups water
  • 1 pack lemon-lime kool-aid mix
     
Directions
  1. Mix in a HUGE bowl and freeze!!
  2.  After frozen, scoop some in cup
  3. Add water and mix until slush!

Broccoli Salad

Ingredients
  • 1 bunch of broccoli flowerettes ( cut bite size)
  • 1 stalk celery - cut up
  • 1/2 red onion, cut
  • 1 red pepper
  • 1 green pepper
  • 1 cup bean sprouts
  • left over chicken pieces
  • sliced almonds
  •  1 cup sugar
  • 1 cup oil
  • 1/2 cup vinegar
  • 2 Tblsp. soy sauce
Directions

Mix veggies together in large bowl.  Put chicken and almonds in.  Mix the last four ingredients for the dressing and pour over veggies.  The vinegar will "cook" the broccoli and it will keep for a week in the fridge.  Sometimes I leave out the chicken and/or bean sprouts.

Teriyaki Sauce

Ingredients
  • 10 oz. bottle of soy sauce
  • 1/2 cup brown sugar (or to taste)
  • 1/3 cup of honey
  • 1 tsp. powdered ginger
  • 1-2 cloves of garlic crushed (or to taste)
Directions
  1. mix together and whala!!
  2. Use on grilled chicken breast...Yum!

Cinnamon Syrup

Ingredients
  • 1c. sugar
  • 1/2c brown sugar
  • 2/3c water
  • 3/4t cinnamon
  • 1/2c cream

Directions
  1. bring to a boil
  2. enjoy!

Shrimp and Rice

Ingredients
  • 4 cups chicken broth 
  • 2 cups water
  • 1/2 onion
  • 2 chopped green pepper
  • 2 cans Rotel
  • 1 teaspoon garlic salt
  • 7-8 cups minute rice
  • 1.5-2 lbs. Shrimp
  • Chicken (optional)
Directions
  1. Boil together first six ingredients.
  2. Then add rice.
  3. simmer until juice is reduced.
  4. Add chicken or shrimp or both.
  5. Place in a 9x12 
  6. Top with cheese
  7. Cook at 350 degrees for 20 minutes.

This will make a 9x12 and an extra 9x9 for the neighbors, missionaries, or the freezer.

Spinach Quiche

Ingredients
  • 9-12 eggs, beaten
  • about 2/3 cup cottage cheese
  • about 1 cup grated cheese (cheddar/jack)
  • 2 Roma tomatoes chopped
  • 2-3 cups fresh spinach, torn
  • 2-3 green onions chopped
  • salt and pepper to taste
Directions
  1.  mix together and pour into greased 9" round ciche dish.
  2. bake at 350 degrees until the eggs are set.

Jello Jigglers

2 1/2 cups of boiling water
4 little packages of jello (2 big packages)

I really just needed this for myself.....
